- Sterilization: heat-treats and homogenises the yoghurt milk, then cools it to inoculation temperature.
- Fermentation: holds the milk with culture in tanks until it reaches the right acidity and texture.
- Filling and packaging: fills cups, bottles or pouches and seals them.
- CIP cleaning: cleans tanks and pipes in place between batches.
How milk pretreatment works
The early steps are the same whether you make set or stirred yoghurt. The milk is standardised to the target fat content, then its dry matter is raised, either in an evaporator or by adding milk powder. Heat treatment and homogenisation follow, which give the product its body and stop whey from separating later.
Once the milk has cooled to culture temperature, the route splits. Set yoghurt is filled and then fermented in the cup, while stirred and drinking types ferment in a tank before filling. Tell us which styles you plan, since that changes the tank and filler layout.
