What blanching does

Blanching heats produce for a short time and then cools it fast. The heat stops the enzymes that cause browning and loss of flavour, fixes colour, and softens tissue so later steps work better. For almonds and some other nuts, it loosens the skin so it slips off in a peeler.

Time and temperature depend on the product and its size. Leafy greens need far less time than whole carrots or nuts, so we ask what you plan to run before we set up the machine.
